It all started when...

Born in Erlangen Germany, Marty Irion grew up enjoying Spätzle made the traditional way with wheat flour and eggs. Marty met Julz in 1985 and married his sweetheart in 1989.  Over the years, Julz (who is a wonderful cook) made spätzle for Marty and the family (Noah and Sam).  Then 8 years ago, both Julz and Marty needed to go gluten-free.  That was the end of us enjoying our favorite German treat.  Julz tried for 7 years to come up with a gluten-free recipe for spätzle with lots of miserable failures.  Then, in March of 2017, Julz tried one last time.  The family sat around the dinner table that night, tried her final attempt to recreate a family favorite.  We tasted it and we all said at the same time - "this is so good, we need to share it with the rest of the world".  On March 11, 2017 the idea for The Vermont Spätzle Company was born and we sold our first spätzle later that year on June 3rd, 2017.   We are so proud and enthusiastic to be spreading the "Spätzle Love" and we are confident that you and your family will truly enjoy our spätzle.
